Turkish Butter Cookies "Un Kurabiyesi"
"Un Kurabiyesi" or Turkish Shortbread Butter Cookies. It's a melt in your mouth butter cookie, traditionally served with tea in Türkiye. Simply means flour cookie, one of the commonly found cookie types sold in pastry shops. You can buy these cookies literally at every pasta shop and many regular supermarkets in Türkiye. But homemade is always the best in my eyes. So let's make it. I have 200 grams butter. In order to make a melt in your mouth texture in the cookie, we need to have clarified butter or g you can use. Since I have regular one, I just melted the butter slowly without burning it. And now going to strain being carefully, not to pour all the way down. Because some of the unclear part of the butter which we call ayran. Will stay in the bottom of the pan as you can see. And we're not gonna use that part. Let it set. And then we are ready to use it. To my mixing bowl along with the butter I'm adding And 1 package vanilla powder. You can use vanilla beans if you like. Just whisk until it is well combined. I have half cup starch. You can either use wheat or corn. I would prefer to use wheat if I have. This will help to give that a melt in your mouth texture. And going to sift In total I used close to 4 cups of all-purpose flour. As you can see it is now playable and falls off from the pedal attachment easily. But since the fat amount is a lot in the dough, we don't have any eggs or other ingredients. When you work with the dough, it might get softer to work easily. You can sprinkle some flour a bit while working. But don't use too much. So we can have the melt in your mouth consistency. To easily shape, I cut the dough into half and make a nice lock. And going to cut again. Because the cutting board I'm using is not that big. So I have the enough space. Just turn it into a lock in about a 4 centimeter in diameter. You can make them bigger. Just how they do in the potty series in Türkiye. But usually I prefer to have them smaller this way. It takes less time to cook fully inside and this is how we traditionally shape. Just gently go along the top with a fork to create a pattern and then diagonally cut with a knife or dough scraper. You can put the uneven ones in the corner to another piece of dough. And then make a lock again and continue to shape. At the end, I got about 34 nice looking cookies. And they go to preheated and continue to bake until it is still white or have some light golden color. Make sure it is completely cooled down before you sprinkle more powdered sugar on top. The outer part of the cookie might seem wet at the first day. But it will continue to set the next day if you can wait which we usually cannot. But it is literally melts in your mouth my friends.
